What Is a Gaiwan?
A gaiwan (蓋碗) — literally "lidded bowl" — is a traditional Chinese vessel consisting of a saucer, bowl, and lid. Used for centuries to brew green, oolong, pu-erh, and white teas, the gaiwan has gained traction in specialty coffee circles for filter-less immersion brewing, where coffee is steeped in the bowl before being decanted through the gap between lid and rim. Gaiwans are made from porcelain, glass, or clay.
